Spicy cucumber salad

Raw Gherkins (about 10-12) or 2 English Cucumbers
3 Cloves Garlic
1 Chilli
10ml Soya Sauce
10ml Rice Vinegar
5ml Sugar
Dash of sesame Oil
5ml salt

Crush gherkins with the back of a cleaver, and cut into smaller pieces. Peel and crush garlic, chop into fine pieces. Chop chilli into little pieces. Add salt, sugar, garlic, chilli, soya sauce, rice vinegar and a dash of sesame oil. Before serving, refrigerate for 10 minutes to improve the crispness.

Three cup chicken drumsticks

8 Free range chicken drumsticks
1 Piece ginger about 5cm long
2-3 Cloves Garlic
1 Red Chilli
Handful of Fresh Basil
20 ml Sunflower Oil
40 ml Shaoxing wine
40 ml Soya Sauce
10 ml Sesame Oil
Pinch Salt
10 ml Sugar

Peel and cut ginger into slices. Cut chilli into three pieces. Crush and peel the garlic. In a heavy base pot, fry ginger slices, garlic and chilli in oil until fragrant Add the drumlet pieces, turn on heat to fry chicken until light brown. Add salt, wine, soya sauce, sugar and sesame oil. Carry on stirring the simmer at low heat with the lid on for about 20 minutes. Stir occasionally until the sauce is thick and sticky. Stir in basil. Serve in the pot.
